Naturally sweet and easy to make. These no bake energy balls are a great source of fibre.
Yield 20 Energy Balls
1 1/2 cups pitted prunes
1 cup walnuts
1/4 cup light cocoa powder
1/4 cup ground flax seed
2 tsp. Cinnamon
1/4 cup hemp or chia seeds
Desiccated coconut and/or additional cocoa powder, optional
Place all ingredients in bowl of a food processor and mix for about 2 minutes or until a sticky dough is formed. Scrape down sides and mix a bit longer if needed. If dough seems dry, add 1 teaspoon of water and mix again.
Scoop out 1 tablespoon of dough and roll into a ball between your hands. Roll in desiccated coconut or cocoa powder, if desired. Place on plate or in container. Repeat with remaining dough. Refrigerate until firm. Will keep in the fridge for up to 4 weeks or freeze for up to 3 months.
