Old Fashioned Baked Rice Pudding

Jen’s Notes: Traditionally used in desserts or puddings because the higher starch content results in stickier rice.

OLD FASHIONED BAKED RICE PUDDING
½ cup short grain white rice
2 cups milk
1/3 cup sugar
2/3 cup water
½ tsp. salt (optional)
1½ tsp. butter
1/4 tsp. ground nutmeg
1/3 cup seedless raisins
Preheat oven to 300F. Mix all ingredients except raisins together in a 1½ quart buttered baking dish. Bake uncovered for about 1 hour. Stir in raisins. Reduce oven temperature to 250F and bake, uncovered, 1½ hours longer. Serve warm.
