Parboiled/Converted Rice

Jen’s Notes: Use vegetable, chicken or beef broth instead of water for more flavour

2 cups water
1 cup rice
½ tsp. salt (optional)
1 tbsp. butter
Bring water and salt (if using) to a boil. Add rice and butter. Stir and cover with a tight lid. Lower heat and simmer until all water is absorbed (about 20 minutes). Fluff with a fork before serving.  Serves 4 to 6.
