Jen’s Notes: Feel free to add “extras” to your pancakes, blueberries, banana slices, chocolate chips, dried cranberries, pumpkin seeds or sneak in a little ground flax seed for extra fibre.
PANCAKE RECIPE: In a bowl combine 1 cup pancake mix and 3/4 cup water or milk. Stir until well blended and smooth. Pour batter on a hot, lightly oiled griddle. Turn after 1 minute or when pancake edge is dry. Cook until golden brown. Turn only once. (Griddle can be tested for proper heat with a few drops of water – if drops bounce and sputter, the griddle is ready.)
WAFFLE RECIPE: In a bowl combine 1 cup mix and 1 1/4 cups water or milk. Stir until batter is well blended and smooth. Follow directions on waffle iron for cooking. A light coating of oil brushed on to the iron will prevent sticking.
