- 2 cups flour
- 1/4 cup brown sugar, packed
- 1 cup butter, softened
- ½ cup sweet shredded coconut
- Grated zest of 2 limes
- 1 ¾ cups white sugar
- 1 tbsp. cornstarch
- 1 tsp. baking powder
- 4 large eggs, lightly beaten
- ¾ cup fresh squeezed lime juice
Preheat oven to 350F. Lightly butter a 9” x 13” baking dish and line the bottom and sides with parchment paper.
Beat the butter and brown sugar together until fluffy, 3 – 4 minutes. Add the flour, zest of 1 lime and the coconut and mix until the dough just holds together. Press into the prepared pan and prick with a fork. Bake for about 20 minutes, until light golden.
In another bowl, whisk together the white sugar, cornstarch, baking powder and remaining lime zest. Whisk in the eggs and lime juice until well combined. Pour into the crust and bake for another 20 – 25 minutes.
Let cool, then refrigerate until set, about 2 hours. Cut in bars and dust with icing sugar to serve.
