Gingerbread Bars With Cream Cheese Frosting

Frosting

  • ¾ butter, room temp.
  • 1 ½ tsp. ground ginger
  • ½ cup butter, room temp.
  • 1 cup packed light brown sugar
  • 1 tsp. ground cinnamon
  • 1 (8 oz.) pkg. cream cheese
  • ¼ cup blackstrap molasses
  • ¼ tsp. ground nutmeg
  • room temp. 1 egg
  • ¼ tsp. ground cloves
  • 2 ½ cups icing sugar
  • 2 tsp. pure vanilla
  • 1 tsp. baking soda
  • ½ tsp. vanilla
  • 2 cups all purpose flour
  • ½ tsp. salt
  • Sprinkles (optional)

Preheat oven to 350 F. Grease a 9” x 13” baking dish. Set aside.

In a medium mixing bowl, whisk together flour, spices, baking soda and salt. Set aside.

Blend together butter, brown sugar and molasses until combined. Mix in egg and vanilla. Add in flour mixture and mix until completely combined. 

Pour batter into prepared dish and press into an even layer using a spatula or lightly floured hands. Bake for 14 -17 minutes or until baked through. Transfer to wire rack and let bars cool completely.

Frosting: Cream together butter and cream cheese until smooth. Add in powdered sugar and vanilla and mix until light and fluffy. Spread over cooled bars. Add sprinkles.
