- ¾ cup white chocolate chips
- 2 tsp. pure vanilla
- 1 cup icing sugar
- ½ cup butter
- 1 ¾ cup all purpose flour
- 1 – 2 tbsps. eggnog
- 1 egg
- 1 tsp. ground cinnamon
- ½ tsp. vanilla
- 2/3 cup white sugar
- 1 tsp. ground nutmeg
- ½ cup eggnog
- ¼ tsp. salt
Preheat oven to 350 F. Line an 8” square pan with parchment paper having it extend over edges to make handles.
In a large, microwave safe bowl, add the white chocolate chips and butter and heat to melt in 30 second bursts, stirring well after each burst. Set aside to cool slightly.
In a bowl, blend together eggs and sugar. Stir in white chocolate mixture and blend well. Add in eggnog and vanilla and blend until combined. Add in the flour, cinnamon, nutmeg and salt and stir just until combined. Spread evenly in prepared pan. Bake for 25 – 30 minutes or until a toothpick inserted in center comes out mostly clean. Set aside to cool while you make the glaze.
Combine sugar, vanilla and 1 tablespoon eggnog in a medium bowl. Blend until smooth. If it is still too thick, add a bit more eggnog and stir again. Spread evenly over bars and allow to cool completely before cutting.
