Most of you know I am a devout “scratch” baker but this recipe is too easy and good to be true; I had to share it.
Crust
- 1 boxed golden cake mix
- ½ cup butter, softened
Glaze
- ½ cup apricot or peach jam, softened
Filling
- ½ cup white sugar
- ¼ cup flour
- 4 eggs
- 2 Cups finely chopped, dried apricots
- 1 cup sliced almonds
Preheat oven to 350F. Lightly butter a 9” x 13” baking dish and line the bottom and sides with parchment paper.
Combine all crust ingredients and beat at low speed until mixture is crumbly. Press firmly into bottom of prepared pan and bake for 10 – 15 minutes or until light golden brown.
In the same bowl, combine sugar and flour. Mix well. Add eggs and stir until well blended. Fold in apricots and almonds. Pour evenly over crust. Bake for an additional 15 – 20 minutes or until filling is set. Remove from oven and gently brush with warm jam. Cool and cut into bars. Freezes well.
